Loaded Breakfast Burrito

Ingredients
- 1 flour tortilla
- 1 large egg, scrambled
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced ham
- 2 tbsp diced red onion
- 2 tbsp diced green bell pepper
- 2 tbsp salsa
Directions
Heat a large skillet over medium heat.
Warm the tortilla in the skillet for about 30 seconds per side.
Spread the scrambled egg evenly over the tortilla.
Top with the cheese, ham, onion, bell pepper, and salsa.
Fold the bottom edge of the tortilla up over the filling.
Fold in the sides of the tortilla.
Roll up the tortilla tightly.
Cook the burrito in the skillet for about 2 minutes per side, or until golden brown and heated through.
Serve immediately.
Recipe Note
For a spicier burrito, add a few slices of jalapeño pepper to the filling.For a vegetarian burrito, omit the ham and add 1/2 cup (75g) of cooked black beans or lentils.For a vegan burrito, omit the ham and cheese and add 1/2 cup (75g) of cooked tofu, 1/4 cup (30g) of vegan cheese, and 1 tablespoon (15ml) of vegan sour cream.
