Ingredients

1 block of tofu, cubed

2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)

1/2 onion, sliced

2 cloves garlic, minced

1/4 cup soy sauce

2 tbsp hoisin sauce

1 tbsp sesame oil

1 tbsp cornstarch

1/4 cup vegetable broth

Cooked rice for serving
Directions
- In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, cornstarch, and vegetable broth to make the stir fry sauce.
- Heat some oil in a large pan or wok over medium heat. Add tofu and cook until browned on all sides. Remove from pan.
- Add a bit more oil to the pan and sauté garlic and onion until fragrant. Add mixed vegetables and cook until slightly tender.
- Return tofu to the pan and pour the stir fry sauce over the mixture. Cook until the sauce thickens and everything is well coated.
- Serve the stir fry over cooked rice and enjoy!
