Ingredients
- 8 oz bittersweet chocolate, chopped
- 1 cup unsalted butter, cubed
- 4 large eggs
- 4 large egg yolks
- 1 cup granulated sugar
- 1/2 tsp salt
- 1/2 cup all-purpose flour
Directions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Grease six ramekins with butter.
In a heatproof bowl set over a saucepan of simmering water, melt the chocolate and butter together. Stir occasionally to ensure even melting. Remove from heat and let cool slightly.
In a separate bowl, whisk together the eggs, egg yolks, sugar, and salt until well combined and lightened in color. This step can take a few minutes with a hand mixer or whisk.
Gently whisk the cooled chocolate mixture into the egg mixture until just combined. Be careful not to overmix, as this can lead to tough cakes.
Sift or whisk the flour into the chocolate-egg mixture until just incorporated. Avoid overmixing, as this can make the cakes dense.
Divide the batter evenly among the prepared ramekins.
Bake for 10-12 minutes, or until the edges are set but the center remains soft and molten. The exact baking time may vary slightly depending on your oven.
Let the cakes cool in the ramekins for a few minutes before carefully inverting them onto serving plates.
Serve immediately with a scoop of vanilla ice cream, whipped cream, or your favorite topping.
Recipe Note
For a richer flavor, use dark chocolate instead of bittersweet chocolate. To ensure the cakes are cooked through, insert a toothpick into the center. If it comes out with a little molten chocolate but no raw batter, they're done.Serve your lava cakes immediately for the best results, as the molten center is the highlight.
