Every step of the production - from the finest quality milk to the right cultures - has been worked out by Herve to produce a pasteurized Brie cheese that really tastes like authentic, old-world Brie. By pasteurizing at a low temperature, more umami-laden, raw-milk flavors are allowed to develop. Complex and rich with garlicky, grassy, mushroomy, and earthy notes.
