Ingredients
- 2 chicken breast halves
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1/2 cup Caesar dressing
- 2 cups romaine lettuce
- 1/2 cup croutons
- 1/4 cup bacon bits
- 1/4 cup shredded cheddar cheese
- 2 hard-boiled eggs, sliced
- 1 avocado, sliced
- 1/2 cup cherry tomatoes
Directions
Preheat the oven to 400°F (200°C).
Prepare the chicken:
Place the chicken breasts in a baking dish or on a baking sheet.
Drizzle the chicken with the olive oil.
Sprinkle the chicken with garlic powder, salt, and black pepper, coating them evenly.
Bake the chicken
Bake the chicken breasts in the preheated oven for 20-25 minutes, or until cooked through. You can check for doneness by inserting a thermometer into the thickest part of the chicken and ensuring it reaches an internal temperature of 165°F (74°C).
Cool and slice the chicken
Remove the chicken from the oven and let it cool slightly on a cutting board.
Once cool enough to handle, slice the chicken breasts into bite-sized pieces.
Assemble the salad
In a large bowl, combine the romaine lettuce, grated Parmesan cheese, and croutons.
Add the dressing and toss:
Pour the Caesar dressing over the salad and toss gently to coat all the ingredients.
Incorporate the toppings:
Add the sliced chicken pieces, bacon bits, shredded cheddar cheese, sliced hard-boiled eggs, sliced avocado, and cherry tomatoes to the salad.
Toss and enjoy
Toss everything together gently to combine, then serve immediately and enjoy your delicious homemade Chicken Caesar Salad!
Recipe Note
Feel free to grill the chicken instead of baking it, substitute croutons with toasted bread, add your favorite toppings like pickles, olives, or corn, adjust the dressing amount for your preference, and create a creamier salad by adding mayonnaise to the Caesar dressing. This versatile salad is perfect for a light meal or lunch!
