An accident never tasted this good. When Goat Lady Dairy set out to make an experimental batch of goat's milk Tallegio, the result was something drier, denser, but delicious in its own right. Some remnants of its Taleggio origin remain - the square shape, and the washed rind, which gives it a notably bready flavor. The cheese is brushed, washed, and turned each day by hand, helping to create its hard aged rind. Try it in the place of Pecorino, with a dark Syrah and an array of vinegary olives.
