Grown in the Lombardy region of Italy.Flavor profile: Specific ripening and aging practices make for very low water content in these pumpkins. Their vivid orange flesh has an intense, buttery, sweet flavor that caramelizes when cooked. Looks most similar to Kabocha squash but with a more intense squash flavor. Aging: Special attention is paid to the ripening stage. They are exposed to the sunlight in the cooler hours, allowing for slow dehydration. This particular process makes the product lighter and enhances the taste and the texture of the flesh. The sealing wax that is applied on the petiole, protecting it and keeping it fresh for a longer time.
