This is the persimmon variety you can enjoy unripened. While they never get as sweet as the hachiya variety, fuyus are not bitter when firm. The flesh is silky with hints of apricot and plum and they're delicious served with cheeses and charcuterie. You can also slice or cube fuyus - something you can't do with hachiyas - making them a pretty platter or salad ingredient.
