Dried Shiitake Mushrooms offer intense flavor to a variety of dishes. Before rehydrating, remove the woody stems and reserve for stock or grind into powder. To use, soak the caps for 30 minutes in hot water or stock, with a drizzle of oil and when ready to drain, lift mushrooms out with a slotted spoon (save the liquid by straining through a cheesecloth). Halve, slice, or chop before using in soups, sauces, stews, and pan sauces.
