A semi-soft, cow's milk cheese, block-shaped and rindless, named after the town in Wisconsin in which it was first made. Colby is a washed-curd cheese, meaning that the curds are thoroughly rinsed in fresh water to remove excess whey or stray lactose. This rinsing prevents the acidity in the curd from dominating. The cheese stays soft and springy, maintaing a sweet, mild flavor. Colby has a higher moisture content and feels more elastic than cheddar with a sweet, rather than savory, flavor.
