Native to Southeast Asia, Chinese Long beans have a mild, asparagus-like flavor, similar to a Western string bean though a little sharper. Their texture is a little different though, softer and more flexible, not as crisp or moist. You can use them in any way you cook green beans - sautéed, steamed, in stir fries, curries and omelets. Because their texture is quite hearty they hold up to intense spices and chiles.
