Our cultivated hon shimeji are delicate, small-capped tan and white mushrooms with a meaty texture and mild, slightly sweet flavor. You can use them any way you would regular button mushrooms. Saute and combine with cooked rice and scallions or serve in broth with braised cod or snapper. Hon Shimeji keep well in their wrapped containers for 2 weeks refrigerated.
