Trevisano (also called precoce in Italian) is the jewel of Italian chicories and is now cultivated in California. Trevisano resembles a spear of red Belgian endive but has looser leaves with creamy white ribs and more pronounced burgundy- colored leaves. Raw Trevisano makes a stunning addition to any salad. Its pleasantly mild, bitter notes and peppery undertones remain whether served cooked or raw, but cooking Trevisano in risotto, braises or grilling will turn the magenta coloring a rusty brown.
