Description
Also called head cabbage, this compact sphere of tightly layered leaves should feel heavy for its size. Though it is often braised, fresh cabbage also makes a great winter salad and is mostly commonly shredded for slaw. When cooked slowly until tender, the raw sharpness of cabbage diminishes and it becomes the perfect counterpoint to rich foods like salmon, game birds and foie gras.
