This clothbound cheddar is made from pasteurized cow's milk sourced from the Cabot Cooperative’s family farms. The cheese is characterized by its medium acidity, caramel sweetness, and savory notes reminiscent of chicken broth and toasted nuts.
The production process involves sending the cheese to Jasper Hill Farm shortly after it is made, where it is bandaged in cloth and coated with hot lard to facilitate aging. It is then stored in a carefully controlled environment for 9 to 14 months. The resulting cheese has a rustic, crumbly texture and a nutty aroma, with a complex flavor profile that balances savory and sweet elements
