Ingredients
- 8 oz rice noodles
- 1 block tofu, pressed and cubed
- 2 cups broccoli florets
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 2 green onions, chopped
- 1/4 cup chopped peanuts
Directions
- Cook rice noodles according to package instructions. Drain and set aside.
- In a large pan, heat sesame oil over medium heat. Add tofu and cook until golden brown, then remove from pan.
- In the same pan, add broccoli and cook until slightly tender.
- Stir in garlic and ginger, then add back the tofu.
- In a small bowl, whisk together soy sauce, rice vinegar, and honey. Pour over tofu and broccoli mixture.
- Add cooked rice noodles to the pan and toss to combine.
- Garnish with chopped green onions and peanuts before serving.
