Taleggio DOP “Il Caravaggio” from Caseificio Defendi is a cheese of high Lombardy excellence. It has a long history, dating back to before the 10th century. Let to ripen for an average of 60 days. Still produced in an artisanal way according to tradition. An intense aroma accompanied by an enveloping creaminess. Its delicate and sweet taste acquires a slightly sour touch with maturation. Awarded in 2025 as the best Taleggio in the World for “its creaminess, aromatic intensity and fidelity to tradition.” Exceptional as pasta sauce or delicious Italian creamy risotto, on pizza, cubed into salad with cherry tomatoes. Fruit: grapes and pears. Dried fruit: walnuts, hazelnuts and almonds contrast the crunchiness with the softness and the tasty notes of Taleggio. Vegetables pairings: radicchio, mushrooms, pumpkin, potatoes, zucchini. Great on a piece of bread accompanied with honey.
