Old Chatham Creamery's farmstead blue cheese is made in the Roquefort style from 100% pasteurized sheep's milk. This luscious, rind-less wheel has abundant blue-grey veining streaking through ivory paste. Ewe's Blue is semi-firm, moist and creamy with a light, pleasing acidity and a sweet, lingering finish. You don't get an overriding saltiness with this lush, approachable blue.
