This raw cows milk Colby cheese is made with milk from Autumn Valley Farm in Worcester, N.Y. The cows are entirely grass-fed so their earthiness is reflected in the deep yellow hue and rich, hearty flavor. Jersey Girl Colby is only made in the spring and summer months which aligns with the availability of grass in the fields. It has a firm and springy and a natural cave-aged rind. The grass-fed raw cows milk is what elevates this Colby above the norm. Its mild, yet lingering flavor pairs beautifully with smoked ham, olives, roasted peppers, fruity white wines and Belgian beers.
