Caspian Cheese is a unique creation from Jasper Hill Farm, inspired by the tommes of the Savoie region in France. It is made from raw cow milk sourced from Jasper Hill's own herd. This cheese is presented in a 7 lb wheel and features a mottled natural rind that is a mix of white, gray, and brown, complemented by rosy undertones.
Aged for 60 to 70 days, Caspian has a distinct dual texture: a more crumbly center encased in a smooth, creamy layer just below the rind. The flavor profile is vibrant, with bright and acidic notes, evolving into flavors of cultured butter and mushrooms at the outer edges. It pairs beautifully with a tart Geuze beer or a Pinot Noir, making it a great addition to cheese boards alongside pork rillettes and crusty bread.
