1/2 cup mayonnaise

1 tablespoon adobo sauce from canned chipotle peppers

- 1 small cucumber, thinly sliced
- 1/4 cup white vinegar
- 1/4 cup water
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black peppercorns
- 1/4 teaspoon dill seeds
- 4 brioche hamburger buns
- 4 slices sharp cheddar cheese
- 4 baby kale leaves
- 4 slices tomato
Directions
In a large bowl, combine the ground chuck, salt, pepper, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, and onion powder. Mix gently until just combined. Divide the mixture into four equal portions and form into patties, slightly larger than the buns.
Preheat a large skillet over medium heat. Add the bacon and cook until crispy, about 5-7 minutes per side. Drain on paper towels. While the bacon is cooking, whisk together the maple syrup in a small bowl. Brush the maple syrup on the cooked bacon and set aside.
In the same skillet used for the bacon, melt the butter over medium heat. Add the sliced onion and cook until softened and translucent, about 10 minutes. Stir in the brown sugar, salt, and pepper and continue cooking until the onions are deeply caramelized and slightly sticky, about 15-20 minutes more.
In a small bowl, whisk together the mayonnaise, adobo sauce, lime juice, cilantro, salt, and pepper until smooth. Taste and adjust seasonings as needed.
In a small bowl, combine the sliced cucumber, vinegar, water, sugar, salt, peppercorns, and dill seeds. Stir well to combine and let the cucumbers marinate for at least 30 minutes, or up to 24 hours.
Preheat a grill or grill pan to medium-high heat. If grilling, lightly oil the grates. Grill the patties for 4-5 minutes per side for medium doneness, or to your desired doneness. Alternatively, heat a large skillet over medium-high heat. Add a tablespoon of oil and cook the patties for 3-4 minutes per side for medium doneness, or to your desired doneness.
Toast the brioche buns. Spread a generous amount of chipotle mayo on each bottom bun. Place a beef patty on each bun, followed by a slice of sharp cheddar cheese, a layer of baby kale leaves, a slice of tomato, a few slices of caramelized onions, and a piece of maple-glazed bacon.
