This bright orange mimolette-style cheese is dense and sweet, with a cheddar-like profile. 5 Spoke Creamery set out to create an American version of the iconic French cheese using cheese molds and timeless recipes sourced from France. They age their raw milk creation in their own underground caves until it develops a firm, crumbly texture and rich notes of butterscotch and cooked caramel.
